A recipe for two people: Ingredients
Cheese cannelloni:
- 225 grams of grated mozzarella
- 225 grams of ricotta
- 12 cannelloni tubes
- A handful of chopped spinach
- 1 egg yolk
- salt and pepper
- Parmesan cheese for topping.

Tomato Sauce Recipe:
- Olive oil
- 3 chopped tomatoes
- 5 crushed cloves of garlic
- 3 tablespoons of tomato paste
- 1 tablespoon of balsamic vinegar (optional)
- Basil leaves
- 1 teaspoon of sugar
- Salt and pepper

Recipe bechamel sauce:
- 50 grams of butter
- 2 tablespoons of flour
- 1 Cup of milk
- Half of a grated nutmeg
Recipe for cannelloni - prepration:
- Preheat oven to 200 degrees.
- Put the cheeses in a bowl add the chopped spinach and the egg yolk. Use a fork to mash the ingredients into an even mixture and season with salt and pepper.
- Transfer the mixture to a pastry piping bag.
Preparation of tomato sauce and béchamel sauce for cannelloni pasta
Tomato sauce preparation:
- Heat a pan with olive oil, crushed garlic, and basil leaves (put the garlic and basil while the oil is still cold).
- Add in the chopped tomatoes, balsamic vinegar, and sugar.
- Lower the heat and cook for 10 minutes.
- Add the tomato paste, salt, pepper, and mix well.
- Cook until the sauce reduces slightly.
* If the sauce is too thick, add some water to it.
How to make bechamel sauce:
- Melt the butter over low heat.
- Add 2 tablespoons of flour to the melted butter and mix.
* It is very important not to stop mixing at this stage. - Add the milk and keep mixing.Â
- Â When the mixture thickens, turn off the heat and continue to mix.
* The sauce will continue to thicken due to the pot’s heat, so turning off the heat before the final desired texture is important. - Add salt and grate half a nutmeg inside.
- The bechamel sauce is ready.

Prepare the cannelloni:
- Spread a tomato sauce and cheese on the bottom of a baking dish.
- Fill the cannelloni with the cheese and place the cannelloni in the baking dish.
- Cover the cannelloni with tomato sauce and bechamel sauce on top.
- Grate Parmesan cheese over.
- Cover with aluminum foil and place in the oven (preheated to 200 degrees) for half an hour.
- Take out the baking dish from the oven and remove the aluminum foil.
- Return to the oven and bake for another 10 minutes.
- Take out the baking dish from the oven and sprinkle fresh basil on the top.
