A recipe for two people: Ingredients

Cheese cannelloni:

  • 225 grams of grated mozzarella
  • 225 grams of ricotta
  • 12 cannelloni tubes
  • A handful of chopped spinach
  • 1 egg yolk
  • salt and pepper
  • Parmesan cheese for topping.
  •  

Tomato Sauce Recipe:

  • Olive oil
  • 3 chopped tomatoes
  • 5 crushed cloves of garlic
  • 3 tablespoons of tomato paste
  • 1 tablespoon of balsamic vinegar (optional)
  • Basil leaves
  • 1 teaspoon of sugar
  • Salt and pepper

Recipe bechamel sauce:

  • 50 grams of butter
  • 2 tablespoons of flour
  • 1 Cup of milk
  • Half of a grated nutmeg

Recipe for cannelloni - prepration:

  • Preheat oven to 200 degrees.
  • Put the cheeses in a bowl add the chopped spinach and the egg yolk. Use a fork to mash the ingredients into an even mixture and season with salt and pepper.
  • Transfer the mixture to a pastry piping bag.

Preparation of tomato sauce and béchamel sauce for cannelloni pasta

Tomato sauce preparation:

  1. Heat a pan with olive oil, crushed garlic, and basil leaves (put the garlic and basil while the oil is still cold).
  2. Add in the chopped tomatoes, balsamic vinegar, and sugar.
  3. Lower the heat and cook for 10 minutes.
  4. Add the tomato paste, salt, pepper, and mix well.
  5. Cook until the sauce reduces slightly.
    * If the sauce is too thick, add some water to it.

How to make bechamel sauce:

  1. Melt the butter over low heat.
  2. Add 2 tablespoons of flour to the melted butter and mix.
    * It is very important not to stop mixing at this stage.
  3. Add the milk and keep mixing. 
  4.  When the mixture thickens, turn off the heat and continue to mix.
    * The sauce will continue to thicken due to the pot’s heat, so turning off the heat before the final desired texture is important.
  5. Add salt and grate half a nutmeg inside.
  6. The bechamel sauce is ready.

Prepare the cannelloni:

  1. Spread a tomato sauce and cheese on the bottom of a baking dish.
  2. Fill the cannelloni with the cheese and place the cannelloni in the baking dish.
  3. Cover the cannelloni with tomato sauce and bechamel sauce on top.
  4. Grate Parmesan cheese over.
  5. Cover with aluminum foil and place in the oven (preheated to 200 degrees) for half an hour.
  6. Take out the baking dish from the oven and remove the aluminum foil.
  7. Return to the oven and bake for another 10 minutes.
  8. Take out the baking dish from the oven and sprinkle fresh basil on the top.
