Eggplant With tahini Recipe

1 Eggplant

Tahini

Cold Water

Lemon for squeezing

1 Fresh Tomato

Salt

Fresh Thyme

Balsamic vinegar

Olive oil

Sliced Bread

50 Grams of Mozzarella Cheese

Preparation

  • Roast the Eggplant on the stove.
  • Preheat the oven to 200 degrees Celsius.
  • Cut the bread into triangles, place them on a baking tray with parchment paper, drizzle the bread with olive oil, and add the mozzarella cheese to it. Season with salt and Put in the oven for a few minutes until the bread is browned and crispy.
  • While the Eggplant is cooking, prepare the Tahini, put the raw Tahini in a bowl, add cold water, squeeze in lemon juice, and mix until thick Tahini with white color, add salts to it.
  • After the Eggplant is cooked, transfer to a cutting board, peel, and cut into equal-sized slices (about 2cm per slice).
  • Place the slices in a circle on parchment paper, cover with one more parchment paper, and flat the Eggplants with a food hammer or any tool with which you can flatten the Eggplants.
  • Transfer the Eggplants to a plate and drizzle with olive oil.
  • Cut the Tomato in half, and grate it on the Eggplant with a grater.
  • Drizzle the Tahini in a way that seems right to you.
  • Sprinkle over fresh thyme and salt.
  • Drizzle with a little balsamic vinegar.
  • Serve with mozzarella cheese toast on the side.
